We all love the concept of an easy week night dinner, something that won’t take a lot of effort to make and to clean up afterwards, at the end of a long day.
But how many of us actually commit to doing it? Or do we just call it quits and order an easy take out and promise ourselves we will do better tomorrow or next week.
The key to success, is to make things that don’t require a lot of effort and where the stove or the oven does all the work for you.
Something that you can leave to roast or simmer away while you go have a long shower or watch tele & relax and not have to stress about.


I am the queen of such meals! 12 years of running a business, working 12-14 hour days with no weekends has made me a an expert at short cuts and easy fixes that are packed full of flavour and don’t end up with me ordering in greasy take outs.
While Sen & I love to eat out at restaurants, I can proudly say we have very very very rarely ever ordered food in at home.
This Minced Chicken Pasta recipe is one of those. The hardest part of this recipe is chopping up ur onion, garlic & tomato! lol.
Pair this with some garlic bread, a garden salad & a nice glass of wine and you can take this from an easy weeknight dinner to an absolute crowd pleaser at dinner parties
Recipe
250 g Minced Chicken
50 g Chopped Garlic
50 g Chopped Onion
2 Tbsp Olive Oil
1-2 Tbsp Chili Paste
200 g Tomato, chopped
1 cup Water
5 Tbsp Garlic Amino Sauce
50 ml Coconut Cream
200 g Cooked Pasta
20 g Fresh Coriander, Chopped
Salt
Method
Finely chop Onion & Garlic
Cut Tomato in half, core out the seeds and cube up the rest (flesh & skin)
Heat Olive Oil in Wok Or non stick pan
Add onion & garlic and stir till translucent, add a pinch of salt
Put the Onions & Garlic aside.
Add 1 Tbsp of Olive Oil into the Wok
Add mince and brown
Add a pinch of salt & stir till Brown
Add the Onion & Garlic mixture back to the Chicken & Stir
Add Chili Paste & the Garlic Amino sauce . Stir well
Add chopped tomato with a cup of water & stir
Taste & adjust for Salt
Reduce the heat, cover with a lid & simmer for 15-20 mins
Stir & simmer again until the tomato have dissolved into the meat sauce
Taste & season
Mix the coconut cream into meat sauce (you can also add milk, greek yogurt, curd or even mayo instead)
Add cooked Pasta & chopped Coriander & mix together
Sprinkles some chili flakes on top (Optional)
Serve while warm
Additional- you can also add some diced carrots, celery and /or frozen peas – Add this just before adding the tomato sauce/Amino Mix
