Mac & Cheese
Elevating this simple dish with a crumb topping
Everybody loves Mac & Cheese. But more often than not, we tend to make it straight out of a box. This homemade Mac n Cheese is an elevated version that we are topping with a crumble topping.
When it bakes, the topping becomes golden and crispy and the inside is all cheesy and bubbly. So delicious.
Mac n Cheese
( Serves 2-3)
200g Macaroni / Pasta
25g Butter
Olive Oil
15g Flour
170 ml Whole Milk
100g Mozzarella, grated
150g Cheddar, grated
1 tsp Garlic Powder
1 tsp Paprika
1 tsp Dried Herbs
Salt
Crumb
20g Butter
35g Bread Crumbs
20g Parmesan
Method
1. Preheat the oven to 180 C
2. Boil macaroni/pasta in heavily salted water for about a minute under than what is said on the package. Until the pasta still has a bit of a bite to it. Strain and set aside
3. In a large pot, melt the butter together with olive oil and add the flour. Whisk in the flour to the butter. Let it cook while stirring, for a few minutes until the flour turns a pale brown colour.
4. Pour in the milk, a little at a time while whisking it into the flour. It will be thick at 1st but keep whisking in the milk until the sauce loosens up.
5. Add in all the cheddar and 75% of the mozzarella and whisk it into the milk until all the cheese melts and the sauce becomes a silky thick consistency
6. Taste & season with salt, garlic powder, paprika and dried herbs
7. Melt a knob of butter and toss the breadcrumbs in the butter. Grate in the parmesan and mix it into the bread crumbs
8. Strain the pasta and mix it into the cheese sauce and pour into an oven proof dish. Top with half of the bread crumbs and the rest of mozzarella and a bit more of the crumbs on top
9. Bake for about 30 mins until the cheese is bubbly and the crumb is golden
