The slight char the prawns get when grilling it on a very hot pan adds another level of smokey richness to this dish. Its super quick to make, you can do all the prep work even the day before and keep the marinaded prawns in the fridge and throw them into a hot pan for a few minutes and serve it up.
The 1st time I made these I did some with the shells on ( cos I thought it will look and taste nicer with the shells on) and did a few with out the shells for the kids to eat easily. But the overall conclusion was that the ones with out the shells tasted so much better, cos the marinade and the garlic parmesan glaze both stuck to the shells and once you removed it to eat a lot of the flavour was lost.

I usually plan for about 3 medium prawns per skewers and about 3 skewers per person
Ingredients
18 Medium Prawns
1 tsp Salt
1 tsp Garlic Powder
1 tap Paprika Powder
1/2 tap Turmeric
1/2 Chilli Flakes
Lemon Zest
Olive Oil
For the Dressing
100g Butter
6 cloves Minced Garlic
1/2 tsp Chilli Flakes
Parsley , finely chopped
Grated Parmasan
Lemon Juice
Method
Peel, de vein and wash your prawns
Pat the prawns dry with a kitchen towel and set aside
In a large bowl, mix together salt, garlic powder, paprika, turmeric, chilli flakes, lemon zest with a good glug of olive oil
Toss the prawns in the marinade till well coated
Cover with sling film and leave for 30 mins (or even over night)
Soak the wooden skewers in water for 30 mins
Thread your prawn on to the skewers
In a pan heat the butter and stir int he minced garlic
Cook on a medium low heat until the garlic softens (don’t let it brown)
Add in the chopped parsley and grated parmesan and set aside
Heat your griddle or pan until very hot
Once heated put the prawn skewers in and grill for about 3 minutes
Turn the skewers and brush on some of that garlic butter onto the cooked side
Turn and brush on more garlic butter onto the other side
Turn even minute for a few more minutes (about 6 minutes in total)
Take it off the heat and set aside
Reheat the left over garlic butter and pour in the juice of half a lemon
Pour the sauce over the skewers and serve
