What is a Ribbon Cake? It’s a play on a soft vanilla butter cake. The layers are usually in pink, white & green. Sandwiched & topped with a creamy butter icing. My version uses only the pink & white layers as I don’t like the look of the green layer.
Ribbon Cake is one of those cakes that we Sri Lankans cannot live without. Similar to our popular Koththu, Hoppers, Rice & Curry and a EGB (ElephantHouse Ginger Beer) most of us grew up eating Ribbon Cake as our Birthday cake.
It was usually made by our mothers, grandmother or an aunt who can bake well. But as life got busier people started to order this cake from different bakeries. And The Sugar Shack was Colombo’s go-to spot for one of the best Ribbon Cakes in town!
After retiring at the end of 2022, I had lost the passion to bake. I just could not be bothered.
But this weekend I got my hands on a shiny new Kitchen Aid- this machine has been on the top of my dream list pretty much my entire adult life but always seemed like it was just too much of an indulgence for my commercial bakery. Courts SG had it at 50% off, so I jumped at it. What a bargain. What a dream come true.


It’s shiny, it’s a pretty pastel blue and most importantly, man oh man, does it work like a dream. So of course , the 1st thing requested by Sen (my husband) is to eat a freshly baked Sugar Shack style Ribbon Cake!
